PROSPEK BIJI KETAPANG (Terminalia catappa L.) SEBAGAI SUATU ALTERNATIF SUMBER MINYAK NABATI

THE PROSPECT OF CATAPPA SEED (Terminalia catappa L.) AS AN ALTERNATIVE SOURCE OF VEGETABLE OIL

Abstrak

Biji Terminalia catappa L atau ketapang merupakan salah satu sumber minyak nabati di Indonesia. Penelitian ini bertujuan untuk mengetahui kemiripan antara minyak biji ketapang dengan minyak zaitun, wijen dan kelapa sawit berdasarkan sifat fisika kimia dan kandungan asam lemak total (palmitat, oleat, linoleat, dan stearat) sebagai metil ester.

Minyak diekstraksi dengan petroleum bensin menggunakan Soxhlet selama 24 jam. Rendemennya (51,25 % b/b) menyerupai minyak kelapa sawit dan minyak wijen, sehingga biji ketapang berpeluang digunakan sebagai sumber minyak nabati. Kandungan metil ester asam lemak dalam biji ketapang berdasarkan analisis KG-SM adalah metil palmitat (35,63%), metil oleat (33,49%), metil linoleat (24,49%), dan metil stearat (4,66%). Kandungan asam palmitat dalam bentuk ester yang tinggi mirip dengan kandungan asam palmitat pada minyak kelapa sawit.

Bobot jenis dan indeks biasnya mirip dengan minyak kelapa sawit yaitu sebesar 0,898 gram/mL dan 1,4648. Bilangan asamnya (4,7 mgKOH/gram) lebih rendah dibandingkan minyak zaitun, sehingga kualitasnya lebih baik daripada minyak zaitun. Bilangan penyabunan (68,83 mgKOH/gram) lebih rendah daripada minyak lainnya, yang berarti kandungan asam lemak totalnya rendah. Bilangan iodium sebesar 75,21, sesuai kisaran standar bilangan iodium minyak zaitun. Berdasarkan hasil penelitian ini dapat disimpulkan bahwa minyak biji ketapang berpeluang untuk sebagai alternatif pengganti minyak kelapa sawit dan minyak zaitun.

ABSTRACT

Terminalia catappa L. seed is one of the source of vegetable oils. This research aimed to know the similarity of physicochemical properties and fatty acids content (palmitic, stearic, oleic and linoleic) among catappa, olive, sesame and palm oils.

Catappa oil was extracted by petroleum benzine using Soxhlet for 24 hours. Oil’s yield (51.25% w/w) was similar to palm and sesame oil. It indicates that catappa seed is valuable source of vegetable oil. Major fatty acid methyl ester composition of catappa oil was analyzed by GC-MS. They were methyl palmitic (35.63%), methyl oleic (33.49%), methyl linoleic (24.49%), and methyl stearic (4.66%). High palmitic acid methyl ester of catappa oil was similar to palmitic acid in palm oil.

Specific gravity (0.898 gram/mL) and refractive index ( 1.4648 ) of catappa oil were similar to palm oil. The quality of catappa oil is better than that of olive oil. This is based on its lower acid value (4.7 mgKOH/gram) than olive oil. Lower saponification value of catappa oil (ccc) indicates that this oil contain less fatty acid than olive, sesame and palm oil. Iodine value of catappa oil (75.21) was equal to iodine value of olive oil. This research shows that catappa oil could be used as alternative replacement of palm and olive oil.
